2 Ingredient Soda Cupcakes

I don't know why it took me so long to discover this. As a kid, I used to bake cakes and cupcakes all the time using cake mix boxes. The simplicity of just adding water, oil, and some eggs was very appealing.  Now with this recipe, you can cut out even more of the work. The important step here is to disregard the instructions on the back of the box completely. Forget about the water, oil, and eggs. All you need is a 12oz can of soda and your cake mix box. This works with any cake mix box regardless of if you're team Pillsbury or team Betty Crocker.

For this version of the recipe I'll be using Pillsbury Strawberry Premium Cake Mix with a can of Sprite Zero. Regular Sprite works just as well, but I've really been on this Zero soda thing lately. The fun thing about these 2 ingredient cakes/cupcakes is figuring out the best combination between different soda flavors and cake mix flavors.

2 Ingredient Soda Cupcakes

Prep Time: 10 minutes
Bake Time: 15 minutes
Total Time: 25 minutes
Yield: 24 cupcakes
Calories: 67 per cupcake

Ingredients:
-1 box of Strawberry Flavored Premium Cake Mix (any cake mix)
-1 can of Sprite Zero (12 oz can of any soda)

Instructions:
1. Preheat oven to 350F. Use nonstick spray on your muffin pan or line 24 muffin cups with paper liners.
2. Using an electric mixer beat the cake mix and soda together on medium for 2 minutes. Be sure to scrape the side of the bowl.
3. Divide the batter evenly into muffin cups.
4. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
